With the Many Flavorful ingredients in this dish, I was Pleasantly Surprised that the Maple Flavor came through! Mexico has many versions of Mole. This one, from the southern states of Mexico, has a mild spicy smokeyness from the Guajillo and Anco Chiles, a nutty richness from the nuts, seeds and charred vegetables and the distinct flavor of Pure Maple Syrup to balance out this sweet-savory dish! This richness is a perfect way to enjoy Shrimp! I savored the flavors of this dish simply by itself but it is a very nice accompaniment with plain or flavored Rice, Corn Casseroles or even a Tortilla.
