100% Pure Maple Candy is made by boiling maple syrup to the soft ball stage (32-34 degrees over the boiling point of water) on the candy thermometer and then cooled to 195 degrees. It is then stirred until it is creamy and then poured into molds. Another batch of Maple Syrup is boiled to 9-11 degrees over the boiling point of water and allowed to completely cool. The dried candies are then dumped into the heavy syrup to grow a crystal coating and lock in freshness for 8 months! Enjoy!
